Many weekends I will grill a ton of food on Friday night. Brats, Burgers, Hotdogs, make a giant thing some type of salad and we will be good all weekend. It's not that I'm lazy (okay maybe a little), but its super convient for us since no one is usually home at the same time in the summer on weekends. During the week however, I usually try to cook decent food.

With teens in and out all weekend I tend to make something that can be grabbed on the fly, and if the weather is cool enough I'll do a few casseroles to last for at least part of the week.

I always try to do fun stuff on the weekends, so that it's something we really look forward to and there's less chance of eating out ALL weekend (though we do eat out 1-2 times).
Our favorites are:
tacos pizza sandwiches (like pastrami or something tasty like that) nachos

My grandmother always made chili on Sundays and didn't pass her recipe on NOR show anyone else how to make it, which is terribly sad because it was SO good.

I never cook on the week-ends. You talk about Week-end Wonders. I usually start drinking right after work on Friday, and when I wake up Monday morning, I say "I wonder where the week-end went?"

In our younger years, we did much more cooking on the weekends, especially meats, to allow a couple of nights of easy meals during the first part of the week. Whole roasted chickens and grilled meat for fajitas are both easy to adapt to a second or even a third dinner.

Welcome to the community, 2828valerie!
Do you and St. B mind reposting your replies in the Pizza Pizza thread? There's a topic about this exact subject going on there and both of your tips are great for that thread. Thanks!!!

Oh, and don't forget that you can often purchase pizza dough from local pizza shops (or even many markets). And it freezes great if you don't plan to use it that day or the next. Just pop it into the fridge to defrost, roll it out, top and bake (or grill).

The pizza idea - We are a family of four and we like our pizza diifferent so I use Naan bread from Dominoin ( there are 2 in a pack) , a small jar of pizza sauce and add your favorite toppings ( peppers, onoins, salami, pepperoni, mushroons pineapple, cheese...etc) than just broil til the cheese melts

Many weekends we just have bruschetta for dinner. I buy fresh bread at a local market (or use left over if available), rub w/sliced garlic and then top it will sliced veggies (tomatoes, eggplant, zucchini, roasted peppers... what ever is on hand) (either leftover from dinners or purchased at the market), sprinkle w/salt & pepper, drizzle w/EV olive oil & some aged balsamic, top w/cheese and bake until golden. If I feel adventurous, I'll make a salad to go w/it! They're good reheated the next day, also. And you can top it w/anything from leftover meat to olives to just cheese and garlic! Yum.

My Grandmother made the most wonderful pizza bread! She split sub rolls and put on cookie sheet side by side. On the bottom half of sub, she spread (HUNT's) tomato paste, sprinkled dried basil, oregano, garlic and onion powder over the tomato paste. The top half of sub she buttered. Then top the tomato paste side with any topping of your choice. The buttered side held your shredded cheese of choice. Bake in a 350 degree oven for 10-15 mins. or until cheese is hot and bubbly and browned. My picky son-in-law won't eat cheese and never eats pizza bread at any restaurant. But, he eats and loves my Grandmothers pizza bread recipe and with cheese! Swears I need to sell these!

My mom always made pizza burgers.
first you have to fry ground beef. drain the grease out. then add in some spaghetti sauce, and continue heating it.
then take a regular hamburger bun, and use halves.
top the flat part of the bun with a spoonful of groundbeef/sauce mixture.
then sprinkle it with shredded mozzerella cheese.
and bake them on 450, for idk around 7 minutes. until the bun is a very light brown, and the cheese is melted.
serve it with some fresh sliced veggies and voila. a perfect fun dinner

Another easy weekend recipe: any pasta, fresh green veggie, cut up ham, creamy pesto or other packaged sauce mix. We don't tolerate lactose so I use lactose-free milk in the packaged sauces and you can't tell the difference. With breadsticks this was a great easy dinner.
