oohh, that sounds good! I put a little spanish fling to my chicken and rice dish by adding tomato sauce, green onions, sliced tomatoes, parsley, oregano , and grated cheese! My family loves it! Try it, you may like it!

Welcome to the boards, Westward!

That sounds almost exactly like a chicken and rice recipe I make in the crock pot! It's very good and yours sounds great too.

:-D

This sounds really good! I've done some similar chicken soups and, if in a pinch, will use frozen chicken. It takes a little longer, but works out well. :)

2 chicken breasts-skinless/boneless/thawed
1can chicken broth
1 cup rice
1 can cream of chicken soup
Poach chicken breasts in broth in covered pot, on low for about 40 minutes
Let chicken set in covered pot for about 30 minutes
Remove chicken and pour broth in measuring cup-if necessary add water to liquid necessary to cook rice.
Bring broth to boil and add 1 cup of rice
When rice is done add 1 can of cream of chicken soup and 1/2 can milk and 1/2 can of water.
Add 1/2 inch cut up pieces of chicken
Stir until heated thoroughly and serve.
You can add cooked broccoli or parsley
