Another good wine is Principato Rosato. Its a light, slightly sweet blush that goes well with chicken. A girlfriend of mine first had it at Olive Garden and loved it, and has since bought it several times. Its very yummy!

If you don't plan on eating the frozen wedding cake for dessert, I'd suggest making a cheescake...do a search on this site (there are some very simple and EASY cheesecake recipes that taste fabulous.)....

He will love anything you make I'm sure....congrats and have a wonderful evening!

Congrats! The first one is always memorable! for the wine...One that I believe goes with ANYTHING it is not too sweet and not dry either.. Gallo Cafe' Zinfindel .... moderately priced too:) my hubby really enjoyed it

All of you seem to agree that it's all about the two of us!! All the ideas are very simple yet tasteful and romantic, I think I'll be making Feta and Vegetable Rotini Salad (http://kraftfoods.com/kf/recipes/feta-vegetable-rotini-salad-75143.aspx) and Creamy Garlic Chicken (http://kraftfoods.com/kf/recipes/creamy-garlic-chicken-91251.aspx), I've made that before and he loved it (at least, that was what he said).
About wine?? What would go good with it? Thanks all for your ideas, they're greatly appreciated. I still have a month to go, and can't wait :) Natnoel

I made fondue for my husband and I since our first date was a fondue resturant. Now we have fondue for every anniversary. We love it.

How about a simple baked pasta.

Easy Baked Veggie Pasta


2 cups cooked, drained corkskrew noodles (or whatever noodle you prefer)
Pasta sauce of your choice
1 box frozen spinach, thawed
1 box frozen artichoke hearts, thawed
1 jar roasted red peppers, drained
1 cup shredded mozzerella cheese
1 cup shredded parmasean cheese

Mix 1st 5 ingredients together, pour into a casserole dish that you have oiled lightly with olive oil. Top with cheeses and bake at 350 for about 30 - 40 minutes until bubbly and browned on top.

You can even prepare this ahead of time and then pop into the oven to reheat while you have a first course of salad and a nice glass of wine. Serve it with some garlic bread.

It's been a long time since our first anniversary, too, but I remember eating a bit of wedding cake we had saved and frozen. Anniversary dinners should be about the two of you. Cook something you both enjoy and enjoy yourselves and the evening.

Hi natnoel, To tell you the truth, I don't have any ideal what I done on our first anniversary?:|. We will soon celebrate our 40th:-D, the 31st. of Aug.:-x. But everyone is right, It's about you two and what you like and most likely he'll only remember what happened after dinner;). But the first time I fixed something special I done the following. Fixed his favorite food (steak & baked potato). Set the table with candles and fancy dishes and served dessert in front of our fake fire place,:). Since we don't drink alcohol, we had non-alcohol carbinated fruit juice in crystal glasses along with our desert.The evening was just the two of us and about us:-x. GOD Bless and lots of "Many Happy Years"!

My husband and I went out to eat for our first anniversary. We had surf and turf, came home and then ate the top of our wedding cake for dessert. Then at about 1AM, as I was 8 months pregnant, I promptly threw it all back up. About $50 worth, literally down the toilet.

If you are planning to cook, I think it matters less that the food is fancy and more that it tastes great. They always say that you should never make something for the first time that you plan to serve for a special occasion, but instead make something that you are familiar with and can do well. If there is a meal that you have prepared that he really likes, make it again and make it great. In fact, even simpler would be a romantic picnic--sandwiches and fruit (you can feed him strawberries and cool whip in your lap!) along with some champagne on a blanket out in the yard or in the park on a beautiful evening. Then you are more relaxed and able to enjoy yourself and your husband.

it's your first anniversary . . .Congrats! Try a cedar plank salmon recipe. Not sure if you can have salmon but maybe you can.

His favorite is lasagna!! I do not cook!! Not lasagna I don't!!, My problem is that I'm always searching for new recipes in this site so I could impress him with something different, and he kinda likes it all, but we are vegetarian so I'm always making twists to the recipes. Now he is on a special diet because I've been feeding him "good stuff", so I want and need to make something extra special so he doesn't break his diet!!
