I posted this recipe over by the need sauce help.
Cut up (one of each) green bell pepper, red pepper, yellow onion, yellow zucchini and squash and marinate them with 2 teaspoon of balsamic vinaigrette dressing overnight.
Heat frying pan with olive oil and garlic with the vegetables with close lids for half and hour in low to medium heat. Stir occasionally and it's sooooo good! I'll try to use Catalina sauce or lemon and oregano. I love vegetables so this is a great dish just to eat and it's not fattening at all. But I'd be careful with the dressing and oil. hi i am looking to try to cut down my meat intake to maybe two times a week and eating veggies the rest of the week. i would love to have recipes just for vegetabels

I would recommend making hearty soups as well, especially right now as it gets cold outside. Some I have tried: Carrot and Ginger, Butternut Squash, Lentil, Black Bean, Split Pea, and Mushroom.

Hey Misty, I, too, have been using Kraft's great ideas for longer than I have been veg, which is about 6 years. As with any recipe, I simply use a substitute. It's not about "replacing" meat but rather adding something tasty, nutritious, and cruelty-free. I definitely make use of "meat analogs," i.e. neatballs and chick-free nuggets, but aside from that and tofu (which does rock), don't forget to try other great veggie protein like seitan (perfect for stews and such) and tempeh (for a good chew). I agree with Christina, tofu is an excellent substitute ! I also wanted to recommend several other ingredients : ) Having originally come from Singapore I am so used to eating all kinds of vegetarian dishes, Indian and chinese cuisines come to mind. Go to Asian markets and Indian grocers - you'll find wonderful ingredients at great prices, if you don't find one near you then try Wild Oats market. Try out ingredients like lentils, egg-plants, spices like cumin, tumeric, fennel seeds liven up many vegetarian dishes. My aunt once made a scrambled "egg" dish using silken tofu ! Dried Shitake mushrooms from Asian markets keep well in the pantry and you can use them in stir-fries and they are rich in B vitamins and so flavourful - Mushroom flavored "oyster" sauce is another Chinese invention for vegetarian stir fries. Kikomman Soy sauce is another must for seasoning vegetarin dishes. Hope these tips will help give you a direction to take with being a Vegan : ) Cheers and good luck ! Sharm

Wow Christina! Not watching what you eat is scary, huh. I am glad that you are feeling better. I am very good about eating beans nut and tofu. But, I think you are right with the b-12. I will get some from the store. I have heard this from several people so far. Have a great day. Misty

Hello! I would most defintly recommend that you substitute your meat recipes and not exclude. Let me explain...if you are making, ordering, or about to eat tacos don't just omit the meat. Instead, but some thin slices of tofu (very cheap and very, very easy to prepare and cook. Tofu acts almost like a sponge, taking in the taste of whatever it's cooked in). Let me exlain my reasoning behind substituting and not excluding. I was a vegetarian for approx. 5 years and excluded almost all meat from my diet except for occasionally eating some chicken. My hair began to fall out, my skin looked grey, and I dropped weight drastically. I looked anorexic. I am 5'6" and weighed 100 lbs-barely. I was having heart palpitations, which in turn made me have panic attacks. I was a wreck! With my doctors supervision it took about 2 years to get healthy again. Again...substitute, don't exclude. Take your vitamins-especially B-12, Iron, and Calcium. This will be a very healthy lifestyle for you if done appropriatly (and I was not doing it appropriatly)! God bless Christina

I am not a vegetarian - but my family does not eat a ton of meat. We eat a lot of pasta - try the Barilla Whole Grain Pasta - it rocks. It's also a got a fair amount of protein in it.
I've substituted ground Boca (frozen) in many recipes that cal for ground beef and it works great!
Also, I found a bunch of meatless dinners on this site.

Hi Misty! We made this one the other day and it was pretty good. We added more cheese, only 8 oz pasta and less chili powder. Also added salsa to make it "saucier" and to give it a little more kick. Southwest Veg. Pasta 1 tablespoon vegetable oil 1 onion, chopped 1/2 green bell pepper, diced 2 cloves garlic, chopped 2 tablespoons chili powder 1 teaspoon ground cumin 1 (28 ounce) can diced tomatoes with juice 1 (15 ounce) can chickpeas 1 (10 ounce) package frozen corn kernels, thawed 1 (12 ounce) package uncooked elbow macaroni 1/2 cup shredded Monterey Jack cheese DIRECTIONS Heat oil in a large, deep skillet. Saute onion, green pepper, garlic, chili powder and cumin. Stir in tomatoes, chickpeas and corn. Reduce heat to low and simmer 15 to 20 minutes, or until thickened and heated through. Meanwhile, bring a large pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain. Combine pasta and sauce. Sprinkle each serving with Monterey Jack cheese.

I am new Vegetarian. I love the Kraft site, and the many recipes I have found here. All of my family gathering in the last 3 years have been 100% Kraft recipes, and everyone thinks I am an amazing cook. I LOVE YOU GUYS! My favorite it the 5 nights.. one Bag.. They really rock. But now that I have become a vegetarian, I am not finding what I need here. Does anyone have a bit of advice for me. Will my tried and true Kraft recipes work if I switch chicken with tofu? Can we request to have a more vegetarian stuff? Any help or advice would be greatly appreciate. BTW.. The ORGANIC DRESSINGS ARE AWESOME!!! Misty Armenti
