My husband likes different things in his salad from what I like so I have all the salad "extras" on a side plate so we can each choose our own - sort of like a mini salad bar. (This also works well for guests to be able to choose their own salad fixings.)
I have also finally convinced him I need him to eat healthier because I really would like to keep him around as long as I can. He says he doesn't like anything that "looks healthy" like wheat bread, brown rice, tofu, etc. I do most of the grocery shopping and I now have him eating leaner meats. I use 93% or leaner hamburg for his burgers. I have him eating more chicken, turkey and fish. I have also gotten him to eat more rice by using Basmati, and a special local South Carolina rice that has a unique flavor. I still make his favorites (like my macaroni and cheese, hot dogs, and chipped beef gravy) but much less often. I also cook only enough of his favorites for the one meal so he isn't tempted to overeat them because they are here...
Good luck. Sometimes it isn't easy to convince them you really do want to keep them around for awhile!

I am so glad I read this post. I could swear she was talking about my husband. he is the same way and I am glad to have read this post like i said above because it gave me and idea on what to do with my hubby.

How about meatloaf and bake potatoe and to make it healthier subsitute turkey for the ground beef (the key is if you don't tell your husband he'll never know the difference) That way your still giving him something he likes (potatoes)but a healthier alternative to being mashed Hope this helped

I love this thread and all the responses. 
I don't have exactly the same problem as my husband will eat almost anything. Oh, he absolutely prefers exactly the same diet as linrobin1 describes for her husband; but at least mine will eat other stuff at times.
Not that this will work for everyone; but the way I gradually got my husband onto more healthy stuff & less good-ole-boy food was actually to stop cooking for him on most nights. I went to an "every man for himself" approach for a while. When I cooked for myself, I was more than happy to cook for him but it had to be the meal I was making for me. If he didn't want that or complained about it, I just made food for one & left him on his own. For a while, this actually resulted in his eating worse as he started cooking more (which is a nice side benefit); but it was all fried this and fried that. Over time, he started getting a little tired of that and started sharing more of my meals. The one adaptation I make is that I generally fix a mostly healthy meal and then add one side dish just for him that is maybe less healthy but something he really likes.
I guess some of you may think my approach was all bad -- practically starving that big 230 lb guy -- LOL. But it worked out for us & now both are eating healthier than we had.

We must be married to brothers! My husband is the same way and I'm a Registered Dietitian....... go figure.
Whenever he has a request for one of the unhealthy foods, I usually try to balance it out with something healthy. Now, he probably won't eat the healthy stuff, but at least everyone else in my family will.
When no one has any ideas for meals for the week when I make my weekly grocery visit, I generally make what I want to make and that is usually a balanced meal or I'll try something we've never had before. He'll usually try it.
That is how I deal with my unhealthy eating husband.

My husband is the same way! He saw that Sadra Lee episode where she said she makes her hubby a chili omelet a couple of times a week, and now he's got me making them for him all the time. And I then I eat them to. We eat them at least three time a week.

Does he like spaghetti? If so, you can sneak a lot of veggies into the sauce. Shred zucchini, carrots, spinach, etc, and cook them in the spaghetti sauce.

Lettuce is a vegetable.
I think that the key is to make small changes....if you set a plate of tofu and broccoli stir-fry in front of him, he's going to revolt. Add things here and there to dinner, a bit of diced red pepper in his lettuce, maybe add shredded zuchini to his hamburgers, and always serve a veg as a side with dinner. Men are like kids--(at least most are, in my experience--I know there are exceptions to every rule !) you just have to keep trying, eventually they will get used to the idea and accept those small changes. Then you make more small changes, and so on. Baby steps are the key, girl!
