1930 Butter Pie
In 1930, Woolworth's was still a Five and Dime store, women were trying to break the "tub habit" in favor of the washing machine, and gas ranges were getting a whole new look. This prize-winning recipe from a now defunct magazine smacks of nostalgia.
1/2 cup sugar
1 egg
1 heaping tablespoon butter
1 heaping tablespoon flour
1 cup milk
unbaked pastry for a 9 -inch pie
--------------------------------------------------------------------------------

Cream the first 4 ingredients together until light; add the milk and mix well
Pour filling into a deep pie tin lined with unbaked pastry
Bake at 350 for about 30 minutes, or until done

Actually, there is a butter pie...not just buttermilk pie. My grandmother always made it on special occasions, and both her daughters and 5 granddaughters have the family recipe. My mother and my aunt, the 2 daughters, used the recipe frequently, and now only my aunt's daughter and I make the butter pies. The other 3 granddaughters mother was a big sugar creme pie fan, so they rarely had butter pie. It is a very simple pie...only 5 ingredients, I think, and the one spice that is used is nutmeg. My recipe is handwritten by my grandmother and is very vague...it's a stovetop filling which is poured into a baked pie shell. The directions are something like..."cook until thickened". I'll try to see if I can find it...we've moved and not all my kitchen has been unpacked.

Here is Grandma Agnes Shaw's recipe for Poorman's Pie her words :) and it tastes good my kids love it.
Make a pie crust. Sprinkle well with flour 2 teaspoons. Add a lump of butter, sprinkle about 2 teaspoons of sugar, about 3/4 cup of sugar, about 3/4 cup milk and a bit of vanilla. Kind of mix this being careful not to tear the crust. Sprinkle a bit of cinnamon or nutmeg on top if deserired. Bake until crust is lightly brown then let cool.

Generally a poormans pie was made for the cooks family after making her weekly pies to use up the leftovers from those during the depression.
During rationing times this other recipe as followswas the poorman's cake.
Eggless, Milkless, Butterless cake.
Bring the following to a boil-
1 c any sugar brown or white
2 c raisins
1 t cinnamon
1c strong coffee
1/2 shortening
1/2 t ground cloves, nutmeg, or ginger or all 3 if you had them

Let that cool, then add-
pinch salt
1/4 c coffee mixed w 1 t soda
2 c flour
1 t baking powder
1 c of any nutmeats
Bake at 350 for 40 min. Makes a soft cake that can be frosted w icing of your choice.

I've never tried to make this, but it was in my husband's grandmother's recipes that I inherited when she died. I'd guess it's from the 1930's. It was old, stained, and well-worn, which means it's probably good.

Butter Pie

1/2 cup sugar
1 egg
1 heaping tablespoon butter
1 heaping tablespoon flour
1 cup milk
unbaked pastry for a 9 -inch pie, in a deep pie tin

Cream the first 4 ingredients together until light; add the milk and mix well.
Pour filling into tin lined with unbaked crust.
Bake at 350 for about 30 minutes, or until done.

I am from the South, and I believe you may be referring to Chess Pie (not to be confused with Chesse Pie) or perhaps vinegar pie. Both are made with basic pantry ingredients and develop a delicious buttery crisp crust on the top with a custardy center. Here is a recipe for chess pie. I'll have to look for my vinegar pie recipe, but the outcome and taste are similar.

CHESS PIE
1 3/4 cups sugar
2 T yellow corn meal
1 stick butter
4 eggs, beaten
3 T buttermilk
1 T vanilla

Mix sugar and corn meal. Add all other ingredients. Bake in pie shell at 350 degrees until middle of pie is firm, usually about an hour but can be anytime from 50-70 minutes.

Paul McCartney mentioned butter pie in one of his songs. So it may be still popular in England. He is mostly Irish though, so maybe you should look up Irish pie recipes.

It sounds sort of like that mock apple pie I used to see all the time on the Ritz cracker box.

Ritz Mock Apple Pie

The classic pie, featuring Ritz crackers baked in a golden crust, is perfect for the holidays. (Don't ask me which holidays. That is Nabisco's comment, not mine)

Pastry for two-crust 9-inch pie
36 RITZ Crackers, coarsely broken
1 3/4 cups water
2 cups sugar
2 teaspoons cream of tartar
2 tablespoons lemon juice
Grated peel of one lemon
2 tablespoons butter
1/2 teaspoon ground cinnamon

1. Roll out half the pastry and line a 9-inch pie plate. Place cracker crumbs in prepared crust; set aside.

2. Heat water, sugar and cream of tartar to a boil in saucepan over high heat; simmer for 15 minutes. Add lemon juice and peel; cool.

3. Pour syrup over cracker crumbs. Dot with butter; sprinkle with cinnamon. Roll out remaining pastry; place over pie. Trim, seal and flute edges. Slit top crust to allow steam to escape.

4. Bake at 425 F for 30 to 35 minutes or until crust is crisp and golden. Cool completely.

recipe for butter pie

Posted: Nov 3, 2006 6:48 AM
my mother in-law made a pie that she called butter pie or poor mans pie. It came out of the depression time when some items were hard to get or keep in the house. I would like to know if any one has ever heard of it or knows the recipe for it. All I know is that it takes milk, sugar, little flour, nutmeg, and pats of butter. I don't know how much of each and how long to bake and at what temp. Any help greatly appreciated.
