When I use beets, I always add 1/4 cup of vinegar. It helps it pickle.

The best pickled eggs I ever made was by using a jar of good quality dill pickles. Eat all of the pickles. Fill the jar with hard boiled eggs. Let the eggs sit in the juice in the refrigerator for several days then enjoy.
