Scalloped potatoes, and green beans w/stewed tomatoes are the most traditional side dishes for ham. If they are meat and potato folk they would probably enjoy it.

Tell them to bring their own side dishes if they are so uncooperative.

How about a simple au gratin potatoes casserole?
I mix sliced, peeled Idaho potatoes with a couple of cans of cheddar cheese soup, a little chicken broth and some shredded cheddar cheese. Bake at 350 for about 50 minutes until taters are tender and cheese is bubbly.

Why drive yourself nuts, how about the ever popular mashed potatoes??? If you want to fancy them up throw some garlic cloves in w/the boiling potatoes. Mash them up with the garlic, maybe some cheese (cream cheese if it were me), carmelized onions, whatever they might like.... You could make them as simple or jazzed as you want and they're pretty straightforward. Good Luck.
