I've never had creamed eggs on toast. With all the eggs our chickens are laying I may have to give this a try.
Eli2abeth, you sound stuck. The ways I'd get rid of them are off your families list. I'll often make a garden salad and cut up some hardboiled eggs into it to make it my 'main meal' for lunch.

Not a big fan of hard boiled eggs (well, the yolks anyway LOVE the white part). What about adding some to pea salad, tuna salad, chicken salad or ham salad?

Does anyone have any other recipes calling for hard boiled eggs? We LOVE coloring them for Easter, but the kids & the big guy won't eat them! I have almost 2 dozen eggs left!
They WON'T eat egg salad. nicoise salad, or creamed eggs on toast & I don't like the idea of scotch eggs.
We HAVE had them in lettuce salads, ham pie, fried rice & devilled eggs (OK, that was just me). I'll be making a potato salad & I am thinking of trying curried eggs.
Any other suggestions?

My mother makes THE best potato salad using hard boiled eggs. I can't disclose the recipe, but she makes it like mashed potatoes with all of the ingredients. The best part are the sliced hard bold eggs and paprika for a beautiful presentation.

Yes everything is incorporated in by stirring. I even take the side of the spoon to break up the eggs slightly. When well mixed, just spoon the creamed eggs over your toast points, "sippets", or split muffins. This is real comfort food!
Chef Bill sez: "Come to think of it, next time I make them, I'll grate some Kraft parmesan cheese over the top. The varieties are endless."

Creamed eggs were at least one breakfast the week after Easter. My mother and my grandmother both made creamed eggs often (a throwback to the WW2 days). Deviled eggs are a great treat to go along with a simple supper. My grandmother always placed peeled hard boiled eggs in the middle of her braccole. Hard boiled eggs are delicious when simmered in spaghetti sauce - also try small boiled potatos and eggplant cut into cubes. This goes back to those meatless days. But, even now the hard boiled eggs from the sauce is still a delicacy. My father loved pickled eggs, so whenever we had pickled beets my mother would save the liquid and refill the jar with hard boiled eggs.

During WW II, I also grew up on creamed eggs. I still enjoy them in many ways!
It was a good "non-meat dinner" and helped out during "Meatless Tuesdays", during WW II, when rationing was in effect.
I forgot to mention in my first post... sometimes I add pre-shredded sharp cheddar cheese to the cream sauce or shredded swiss cheese, 50-50, with the cheddar cheese; a delicious combination.
Chef Bill sez: "Creamed eggs on toast, "sippets", or split biscuits are also a good "supper" if you feel just "a bit" hungry, but don't really want a large meal. It can even be made a day or two ahead so it will be ready when you are. Just prepare it, cover it, and refrigerate it for up to two days. When ready to serve, warm the creamed eggs slowly in a sauce pan or micro-wave them @ 50% power until warm, adding a splash of lo/no-fat milk, if required, to maintain the consistency. Do stir occasionally. Sprinkle with chopped fresh parsley and a dash of paprika and enjoy."

Bill I grew up on creamed eggs on toast and I also made them for my girls, who like them so much that they requested them for Easter brunch. One of the my girl's boyfriends had four of them !! They are easy and delicious.

I like to make creamed eggs on toast for breakfast or brunch.
In the microwave in a small microwave safe bowl, place a tablespoon of chopped red or green sweet pepper (or both), a tablespoon of finely chopped onion and one tsp canola oil. Nuke covered for about 30 secs, or until soft.
Make a basic cream sauce and when thickened, add two sliced hard boiled eggs and the pepper and onion mix to the sauce.
Serve over toast points or "sippets".
I also like to add the following to make variations. A dash of curry powder to the sauce or, a dash of Italian seasoning... some crumbled bacon or sausage. a dash of hot sauce... but not all items at once. Serves 2.
