Florence those look yummy! You can always marinade the fish in the italian dressing for a couple hours and toss it on a grill. Thinner pieces should only take 4-5 minutes per side.

Mahi Mahi is a very durable fish to cook with. Mahi Mahi can be used in place of any recipe that calls for Salmon, Grouper, Orange Roughy, Halibut and Cod. Here is the easiest one I've come across so far. Simply and healthy.
1/2 c. Italian or lite Italian dressing 1 small green pepper, cut into strips 1 small onion, thinly sliced 1lb. fish fillets 1 med. tomato, chopped
In large skillet, heat dressing and cook green pepper and onion til tender. Add fish and tomato Cover and simmer about 10 mins. or til fish flakes Serve over hot rice
