Thanks Steph! I am printing this out and will try your ideas the next time I make Tropical Salmon! Some shredded coconut over all might be good too.

For a tropical twist I use the boursin cream sauce and add some canned pineapple, canned tomato and some chunks of leftover ham. It's all the toppings from a Hawaiian style pizza in a yummy sauce. It's great on chicken or fish!

This must be what you're talking about. I've had this many times over salmon and it is really, really good.

Was it a menu from Jay Leno's "headlines" segment?

I believe you had the salmon stuffed with crab, mushrooms and cream cheese, topped with a BOURSIN sauce. It is excellent. You can buy many varieties of Boursin cheese at your grocery store and make a sauce by heating it with a little cream. Delicious.

LOL You're all great; but no, it IS BORNAIS. That's what is on the menu. All the waitress could tell me is that they use Cream cheese. It was at the "Wind & Sea" restaurant in SoCal.

Maybe it was a Mornay sauce? Doesn't that have chesse in it? Bornais and Mornay sound similar if you have a cold.

Mrs. R is right.
Bernais sauce never has cream cheese in it.

This does not have cream cheese in it but it's Bernaise sauce, which sounds like the name of the sauce you're talking about.
Quick Bernaise Sauce
3 tbsp. white wine 1 tbsp. tarragon vinegar 2 tsp. tarragon, chopped 2 tsp. shallots or scallions, chopped 1/4 tsp. ground black pepper 1/2 c. butter 3 egg yolks 2 tbsp. lemon juice 1/4 tsp. salt Pinch cayenne pepper
Combine wine, vinegar, tarragon, shallots and pepper in saucepan; bring ingredients to a boil and cook rapidly until almost all the liquid disappears.
In a small saucepan, heat butter until it bubbles. Do not allow butter to brown! Place egg yolks, lemon juice, salt and cayenne in blender or food processor. Cover and pulse at high speed. Gradually add hot butter while blending at high speed. Add herb mixture, cover and blend on high speed four seconds. Serve immediately.
Makes about 1 cup sauce.

All I know is that it is made with Philly cream cheese. I had a dish that was salmon stuffed with crab and mushrooms with "bornais sauce". The dish was absolutely heavenly, if you like salmon. Any help?????
