I never would have thought of those ingredients together either - cream of chicken and chili? But I am intrigued enough to maybe give it a try! lol

Thank you for this recipe! About once every other month I prepare some variation of this using ground beef or turkey. Tasty, but getting boring. I would never think of putting your ingredients together, but it sounds like it would work pretty well. Next time I'm using-up-the-rest-of-the-tortillas, I'm going to try this recipe!

Welcome to the community, Deanng66, and thanks for the recipe.

I tried cooking King Ranch chicken, similar that it is made with tortillas, in the slow cooker and I didn't like the way the tortillas came out, but that could be just me. They were really mushy and I like it baked because the tortillas still retain some firmness.

deanng66, I think it sounds very good. It's a little to large for two of us, but I go to a church pot-luck once a month and it would work for that, plus be something different. How good is it almost cold or reheated? Do you think it would do well in a crock-pot? Also a great way to use left over cooked chicken. Thanks, annaskf

Easy layer chicken enchiladas (MY FAMILYS FAVORITE MEAL)

You can edit ingredients to make as much or as little as you like...

2 cans Hormel Chili with NO BEANS
2 cans cream of chicken soup
1 lb diced chicken-cooked
10 Four tortillas
16 oz shredded cheese

Start by mixing the chili and soup together well to create the "Sauce"
Using a lasagna pan start by spreading a thin layer of sauce on bottom of pan. Tear the tortillas to cover sauce (Your layering like you would lasagna) cover tortillas with more sauce, then chicken, then cheese and repeat with tortillas, sauce, chicken and cheese until you run out of ingredients.
Bake at 375 for about 20 minutes or until bubbling hot ...its best of you let it set for about 15 minutes before serving...it firms up some.
