Welcome to the community, corkerinno. =)
My guess would be you could use whatever kind you like best. Probably not at much of a spicier pepper though. A cup of jalapeno, mmm!

I'm not a great cook, but this recipe looks great. I need to ask what kind of peppers?

I make Italian Chicken...
4-6 B/S chicken breasts (I use frozen) 1/2 - 1 cup Italian dressing (depends on how many pieces of chicken) Emeril's Original Seasoning.
Season chicken on both sides. Place in baking dish and pour Italian dressing over all. Bake at 350 until chicken reaches 160 degrees internal temp. (About 20-25 min)
I serve this with rice and usually broccoli or brussel sprouts. My hubby likes to use the extra "sauce" on his veggies and rice.
The nice thing about this recipe is you can adapt it to your family's tastes and what you have on hand.

Welcome to the community, scrapperjenn.
I love enchiladas, but I have to admit, I usually go a more pre-packaged route for mine lol. This recipe looks super easy though! I may have to give it a try. Thanks!

In the Slow Cooker, place the onion & pepper with sausage on top
Stir together tomato sauce & water and pour over sausage, sprinkle with salt/pepper & garlic powder - COOK on low 7-8 hours OR high 4-5 hours
Slice up each sausage, and with the sauce, serve over cooked pasta

French Onion Soup
2 large sweet onions, thinly sliced 1 cup red wine (recipe calls for a dry red, but I like to use Port. A little dry, a little sweet) 2 - 14.5 oz cans beef broth 1 - 5 oz bag seasoned croutons (to taste, I like more) 4 thick slices swiss cheese
In a DEEP skillet (I like my big cast iron just because it IS super deep) heat 2 Tbsp. EVOO over medium heat. Add onion and sweat; stirring occasionally, until translucent and softened.. about 15 mins. Add wine and bring to a boil. Add broth, lower the heat and simmer for 10 mins; season with pepper. Meanwhile, preheat broiler. Laddle soup into oven proof bowls, top with croutons and cheese. Set the bowls on a rimmed baking sheet and broil until cheese is golden and bubbly, about a minute.
This is my favorite French Onion Soup recipe of all time. It beats Friday's and Panera Bread's recipes hands down. The left overs are good the next day with croutons and cheese in the nuker even. Love this one. Just make sure not to take your broiler for granted. When it says about a minute it means it. I had to scrap burnt cheese of the soup the first time because I thought I had enough time to hit up the little girls room. Oops.

Simple Chicken Enchilada's
1 cup salsa 8oz cream cheese 2 cups chicken 1 cup peppers 6-8 tortillas (6 inch) 12 oz cheddar cheese (shredded) Stir cream cheese and salsa over low heat until cream cheese is melted. Add Chicken and peppers. Stir on low just until heated. Spoon approx. 5-6 tablespoons on tortilla. Roll up. Place seam side down in a greased baking dish. Sprinkle shredded cheddar cheese on top and bake for 20 min. at 350 degrees until thoroughly heated.
This works really well with leftover chicken, but you could also use uncooked and cook it before adding it to the cream cheese mixture.

I love how kids name comfort foods. When I was growing up, my Dad would sometimes make us corned beef hash and eggs. He would place an egg in the center of a slice of hash and fry an egg and heat the hash at the same time. We had a weird name for it, too, which of course I can't post.

Here's one my family enjoys. It sounds weird, but it's very good. You have to like corned beef. We call it "Alpo."
1 box macaroni & cheese, prepared 1 can corned beef 1 can cream of mushroom soup 1/3 cup milk 1/4 cup breadcrumbs
Prepare mac-n-cheese according to package directions. Break up the corned beef into a bowl. Mix together soup and milk and add to corned beef. Combine corned beef mixture with prepared mac-n-cheese and place in casserole dish. Sprinkle bread crumbs on top. Bake at 350 for about 20 minutes or until heated through. Enjoy!

I love this recipe. I usually mix the preserves, dressing and soup mix and pour it over the chicken, and I use Catalina dressing. Very yummy!!

Hi Moderator Sky -- I definitely will try the Chicken & Rice crock pot dinner. I've spent the morning going thru this web looking for new time saving and one-dish recipes and this sounds delish! I will make it soon trying broccoli as the veg. Thanks!
