I love these and wanted to serve them at a Christmas party this year. My husband became absolutely apoplectic over the news! He hates scallopps and didn't want them at the party. :(

I rarely use seasoning packets so I don't know how they are properly stored. However, I have looked at them and it seems to me they should be refrigerated if they contain milk products. We keep our nonfat dried milk in the refrigerator, so it makes sense to keep products containing that and things like it in the refrigerator.

I, too, have heard that pork quality has improved since the time of Moshe. And for those who are not guided by the laws of kashrut for religious reasons, it seems that pork might not be as bad for you as it once was. That said, I have never tasted it and never will, just as I have tasted neither shellfish nor mixed meat and dairy. I do sometimes read recipes that contain pork, and know that I can substitute white meat chicken for it. Pork is to be avoided, but only as an edible product. It's not the plague or something like that!

They call pork "the other white meat." White meat is supposed to be better for the heart so pork must be heart-smart.

Seasoning packets do not have to be kept in the fridge.
They are on the groc. shelf

I've heard that they've made a lot of changes in how they make pork meat since the Bible was written.

Pork meat is white and tastes so good and is really easy to digest. I asked my doctor about it and he recommended it for me. Except bacon which is not the white meat kind of pork but still good:-D

I READ A BOOK CALLED, "WHAT THE BIBLE SAYS ABOUT HEALTHY LIVING". IT WAS WRITTEN BY A DOCTOR. IN THE BOOK, I LEARNED THAT PORK WAS ONE OF THE MOST UNHEALTHY THINGS YOU CAN EAT.

WHEN I WAS LOOKING THROUGH ALL THE WEEKLY MENUS, I NOTICED THAT JUST ABOUT EVERY WEEK HAD AT LEAST ONE PORK ITEM. MY FAMILY NO LONGER EATS PORK, AFTER READING THE BOOK, AND I WAS DISAPPOINTED THAT THERE WERE NOT MORE BEEF OR CHICKEN ITEMS. I THINK, IF I REMEMBER RIGHT, THERE WERE ONLY 2 OR 3 WEEKS THAT DIDN'T HAVE PORK.

Sounds like a lot of mumbo jumbo to me, Paul. DO you work for the beef people or something?

I, for one, think pork is much healthier than beef. Plus it tastes so much better.

Pork being "healthy" is probably debatable.

The pork industry says this about today's pork products. [quote]Through changes in feeding and breeding techniques, pork producers have responded to consumer demand for leaner pork. Today's pork has 16 percent less fat and 27% less saturated fat than 15 years ago.[/quote]

According to this pubmed publication, lean ham is still 50% fatter than other lean meats.

So, regardless of the pork industry's protests, pork still is less healthy, in terms of fat content, than other lean meats. :)

While not being Jewish, I have still been surprised by the number of pork recipes with a seeming exclusion of beef recipes.

We don't eat pork, so recipes that are a little more "kosher" would certainly be welcome to us.

I don't know if I feel good about refrigerating seasoning packets. Won't they pick up off flavors from all the fresh foods stored in there? I think it makes more sense to use them up frequently so they're fresh most often.

I don't know....this really threw me for a loop. I guess I could buy a small fridge just for my seasoning packets. I sure hope they have one to fit all my shoeboxes!

How are you going to keep your seasonings fresh, then, NY?
I was going to use your idea with my son's shoe boxes, (he is a size 14) but I am shocked to learn from Jen that they require refridgeration.

If you have any ideas, I am open to them.
