This is why we always stay at the Embassy Suites plus they have a manager's reception every night from 5-7 w/free drinks.

Hi bsmesser, I just now seen your email. I've had similiar situation. Usually we stay at a hotel with free continental breakfast plus we like to go out for supper. But here is what I do for some breakfasts and lunch. I heat hotdogs in the microwave for quick lunches. Also I make tuna salad served in mini pita pockets or prepacked deli meats. Or I bring ready to heat microwave canned goods or packaged foods that do not need refrigerated. For breakfast I have a microwaveable egg dish recipe from kraftfoods. In a glass pie plate spray with nonstick spray, then beat 4 eggs and a dash of milk together in plate, add salt to taste, shredded cheese, if desired, ham or bacon bits or whatever you like in an omlete, cook on high 6 min or until eggs are set. Cut into fourths serve on toasted bagels. Hope this is helpful.

we normally take a crockpot with us...you can fix chicken and rice, curry chicken, ehicken noodle soup, etc...add a salad and fresh deli baked bread to any ot those and you have a full meal

confession though...we love eating dinner out on our trips...checking out the local fare and eating fresh seafood...

Hi bsmesser, you already have great ideals here:). But, I'll add what I do. First I bought an electric pressure cooker/pot at a yard sale and I take it with me, because I can use it like a skilet, reg. pan or as a pressure cooker,:).Also, a can opener,large spoon, pancake turner and measruing cup & spoons, either a pitcher or 1 gal jug/with lid. The only foods that I take from home are items that I think would cost more or would need to buy a large pack, such as sugar, flour,tea bags, and popcorn. I buy the meat and fresh food there, it's still cheaper then eating out.Plus, I like my own foods when it comes to somethings. We usually stall at a hotel/motel that has a "free" breakfast, that saves a lot to. Lots of luck be carefull and GOD bless.

Potatoes and corn on the cob will both cook up in a microwave. We've found wrapping them in a towel helps.

Well, if you will be fishing and someone is handy with filleting a fish, you can use the microwave to steam it with veggies. I found a great article HERE with tips on steaming fish and vegetables in the microwave.

If you have access to an outside charcoal grill, you don't really need the Foreman grill, though I like to use mine to make grilled cheese sandwiches!

The crock pot is always useful. You can bring items that don't take up fridge space like vegetables and rice or some other starch and then add chicken or other meat to it.

If it were me with a setup like that, I would stock up on lots of foods that don't need refrigeration, like most fruits and vegetables, trail mix, and jerky. Let the family graze on those things during the day, and save the fridge space for meat products for evening dinners.

Its easy actually. Cook your food early pack on Ice in a cooler. Make sure you put the food in a Microwave friendly container. When you are ready to eat just go ahead and heat in the Microwave. Store what you can in the little freezer and fridge and the rest keep in ice in your room. Oh I forgot make sure the food is frozen before you leave home. I hope this helps you and enjoy!

Vacation cooking with mini kitchen

We will be on vacation in Southern Maine in a converted motel. We try to cook in on vacation to save money but will only have a microwave and mini fridge this time. No cooktop or oven and they do not have gas grills.

I don't want to carry a lot but can bring a med foreman grill, electric skillet, and/or a crock pot.

Any suggestions?
