Corn is not, in any way, a legume. Read up. It's a grain.

Although they are technically carbohydrates, they are more commonly called legumes. I really don't know of anybody that buys canned carbohydrates in the store.

Any bodypart or meat product can be replaced by vegetarian products, there are several brands available nationwide in supermarkets, plus some brands are available online (or through health food stores).
Here are some examples:
when the recipe requires pork sausage, you can take Boca Breakfast links (they taste a lot like Nuernberger Rostbratwuerstchen) or Boca breakfast patties (same taste, just shaped diff.).
The best chicken-like taste you are getting from Quorn, an english (UK) company. This might not be available in all areas or all supermarkets, but you should look around, because THAT is really worth its money! In case you can't get it, Boca and Morningstar Farms are also offering chikk'n products, but theirs are by far not as good as Quorn's.
Tofurkey is of course the best for replacing turkey, try their lunchmeats! (not frozen but refridgerated) They also offer a Thanksgiving set with roast and side dishes. They also offer a pork-like sausage in a 4-pack, called "italian sausage". I am german and have no clue what is italian about it, it tastes just like german Bratwurst. Cut them in slices and fry in olive oil, then add to recipe! MMMMMh!
Gardenburger once had the best variety of al kinds of vegetarian products, they had meatloafs, ribblets, burgers and more. They are a private company, and the big players (like KRAFT and Kellogg's, who own Boca and MSF) weakened them badly. That is really a shame, because the big companies can endure lower prices over long (they make their gains in other areas, like detergants or dressings), while a private company like Gardenburger has no chance to keep up with lower prices. They have reduced the number of products drastically during the last 2 years, that is so sad. Then they tried to come up with microwavable meals, which are pretty good. But as a self-cooking housewife I don't need readymade frozen meals, I am cooking myself.
The best beefstyle burgers are from Morningstar farms, they are called "Prime Griller". You can also get beefstyle strips from Lightlife, but they are a bit rubbery in my opinion.
Take a look into the freezer sedtion in your local supermarkets, and don't expect evey supermarket to have all products! We are actually buying that stuff in 5 different stores, in a certain schedule. Every store is visited either once a week or every 2 weeks.
Always read the fine print of evey product you are buying (before you buy it!), and avoid anything that says "processed", "hydrogenated", "modified", "enriched" etc. in the ingredients list. And educate yourself about certain ingredients! Some seem to be non-meat-like, but they were made with bodyparts, for example marshmellows and jello, both contain gelatine, which is made from either cow-spine or (lately, after BSE) pig-spine. Even some Joghurts contain gelatine!

Yes, my kids wouldn't want to eat so many similar meals in such quick succession. It's hard enough to get them to eat peas ONCE a week let alone twice a week.
Now, broccoli... That's another story. My kids are weird enough to eat that three times a week. LOL

Some of the meals appeal to me but there's not enough variation in the week of menu. Rice three days (even though Thursday's menu doesn't state rice, it looks like rice in the picture) ... pork one day, then chicken, then pork, then chicken again. And pea's two days in a row? That's amunition in our family for bodily noises! I do believe in leftovers and this does appear to stop a lot of wasting of food. I'll check back in the near future.

Replace any meat product in the recipe with tofu or a Morningstar Farms product. Congratulations, you've gone vegan!

I love the express checkout idea. I just wish they made a few for vegetarians.
