Well, be sure and come back and tell us what you tried and if it was a success. My sugar craving gene just went into over-drive reading the recipes you listed. :)

I googled also--so many recipes, so little time!---can't decide which one
is the old fashioned that the department stores candy had--they would order them and put your name on it!----Maybe the potato one?

Coconut Easter Eggs 

3/4 C. mashed potatoes -- unsalted
2 C. flaked coconut
1/2 t. salt
1 t. vanilla extract
3 1/2 C. confectioner's sugar
8 oz. semisweet chocolate
1 T. vegetable oil

In mixing bowl, mix potato, coconut, salt and vanilla. Gradually mix in sugar. Cover; refrigerate overnight. Shape into 1/2 T. size eggs. Heat chocolate and oil until chocolate melts. Dip eggs into chocolate oil mixture. Set aside on wax paper in refrigerator to harden.

Makes about 60.
 

Coconut Cream Easter Eggs
1 medium potato; cooked and mashed
1 (16 oz.) bag coconut
1/4 t. salt
1 t. vanilla
3 lbs. confectioners' sugar

1 lb. melted chocolate

Thoroughly mix potato, coconut, salt and vanilla. Gradually add sugar and mix until thoroughly blended. Shape into eggs on cookie sheet and let ripen overnight.

Next day, dip into chocolate. Set eggs onto waxed paper to harden.

Coconut Creme Eggs

4 ounces sweetened shredded coconut
8 ounces cream cheese
1/4 pound butter
1/2 teaspoon salt
1/2 teaspoon vanilla
2 pounds powdered sugar
melted semisweet chocolate

Mix ingredients together; shape and freeze overnight. Dip in semi-sweet chocolate.

Coconut Creme Eggs

4 ounces sweetened shredded coconut
8 ounces cream cheese
1/4 pound butter
1/2 teaspoon salt
1/2 teaspoon vanilla
2 pounds powdered sugar
melted semisweet chocolate

I've never had this sort of Easter egg but I did a google search. Is this close?

I checked the link, and the recipe included cream cheese, which is not
a taste I remember in the Large coconut cream egg my Mom made me hunt for every Easter----any others?--the taste of the coconut filling is
like the cinnamon covered "Irish potato's" that appear for that Holiday.
(I bought the Angel flake coconut, the unsweetened bakers chocolate, have sweetened condensed milk but--
