I don't post here often, but I have been looking for recipes for St. Patrick's day and Easter.

This post of the lamb cake has brought back so many memories of my mom making them for Easter gifts. She would make no less than 8 of them a year! She did use frosting and then covered the lamb with coconut and then she would put reynolds wrap on a platter and put the frosting on the platter and then the lamb. She would extend the frosting out and use green colored coconut for grass and sprinkle jelly beans and also colored eggs. Around the Lamb's neck she would attach a thinner piece of ribbon and then a small bow, like the ones at Christmas in the bags. She would use yellow, pale blue and pink all Easter colors.

I have done this for years now for my kids and now my grandkids. One saving grace about greasing the mold is that I use that brand of spray for baking and it works great.

I am a baker at our local restaurant and I plan on making this as a center piece for our case. They are so pretty.

I have an aluminum mold and I use a pound cake recipie mostly because it is a heavier cake and stands better. Make batter ,fill face side of mold to top of face half with batter ,I put toothpicks in ears to help stabilize cover with bottom half and bake as directed. Always make sure to grease mold well but most pound cakes have lots of butter in them so that also helps. Cool for about 5 minutes on rack remove back half let stand a while and remove from front half when cold frost as you want or just cover in powdered sugar. Hope this helps! The back half will fill out while baking as batter raises.

Oh good - LOL - because I couldn't find my easter stuff in the basement, which means it's all in the attic. I don't do the attic, so I have to wait for the big guy to get it down for me :) THEN I'll get that picture taken.

I'm not sure I understand your questions. It's hard to explain. The 'front' of the lamb is on the 'bottom' when baking. the 'back' is the top.

Yes, you fill the front/bottom/first half of the mold to it's top, but the back/top/second half of the mold is sort of like a cover when the cake is baking. There is no batter in this part of the mold to start with.

While baking, the cake & mold is not standing up, but is lying on it's side, which is the front of the lamb. I guess it's designed in such a way that the nose & the curled up back legs are at the same height, so that part of the mold lies flat when it is sitting on the cookie sheet.

WOW Elizabeth, I wouldn't of thought of that. Do you fill the first half to the top? What keeps it level? Sometimes it dose seem strang the things that you can't post. I tried to give instructions on how to kep the cooking magazines in a note book. couldn't post it,:(. annaskf

Whoo - hoo! It finally went through!

Do you suppose Kraft's server gets hormotional??????

FYI - serving a "lambcake" is very traditional for Czech & Polish families. The cake looks like the "paschal lamb".

You can simply dust it with powdered sugar, or frost it sprinkling with coconut for the wool. Grandma used raisins for the eyes & a date for the nose, but I have discovered that using jelly beans works just as well.

Hmmm....maybe one more try.

Grease & flour both sides of the mold. Make sure not to miss any spots.

Place mold nose down on the cookie sheet. Fill with batter. Cover with the other piece of the mold. As the cake bakes, it will rise & fill the mold. There wil be enough batter left over for cupcakes :)

Test for doneness using a toothpick or wooden skewer.

Set on rack to cool. Remove the top mold (back half) after a few minutes, but leave it in the bottom half until thoroughly cooled (about 30 minutes).

Once cool, stand it up & decorate as a lamb :)
