I had a piece of pizza topped with onions, green bell pepper, olives, and sausage, and a big salad.
Tonight we're having grilled beef and chicken kabobs with broccoli, salad, and some kind of rice...still workin' on that last one!

When dinner plans to go out got cancelled- I had to whip up a quick meal for the fam. Just using what I had in the house I made this: 12 large frozen raw shrip (thawed and peeled) 1 small onion, chopped 1/2 jar of artichoke hearts in oil (used some of the oil to sautee shrimp) 3 tablespoons sundried tomatoes (used some oil for sauce) 2 tablespoons tomatoe paste 1 can of whole olives 4 servings of whole wheat Thin Spaghetti
I sauteed the onion until soft, then added my artichokes with a reserved oil, then lowered my heat and added shrimp and the rest of the ingredients, cooked until shrimp was white. I served with whole wheat Thin Spaghetti (the thin makes all the difference) and it wasn't much sauce but just enough. It came out great- they even suggest I write the recipe down to make again! And it was fast and pretty healthy.

Turkey sandwich with lettuce and some chicken flavored noodles. Notvery healthy or creative, but it was church night and I forgot to preplan.

That sounds healthy, Jen, also good. My DH is sick with a very bad cold and he asked for scrambled eggs so that's what we had.

still in contest prep mode so dinners are kind of boring. Last night was baked chicken dreged in wheat germ and some steamed cauliflower, tonight is shredded chicken, cottage cheese and baked sweet potato - seems everything i am eating lately has been very white...maybe i'll change it up with some colorful fajitas on tomorrow

Welcome to the community, Jenny102881!
I changed my mind... I was grocery shopping last night and picked up ingredients so I could have tuna salad on toasted bread and then ate some stove-top-popped popcorn along with it.

tomato soup, grilled cheese, and salad. I haven't had tomato soup since I was a kid. It was a nice change, but will probably be a while before I want it again. Not a huge tomato fan (unless it is a tomato sandwich )

That sounds really good, and easy! I like easy.
We had a potluck dinner Sunday night, pulled turkey BBQ, cheesy hasbrown potatoes, bean dip, and lots of salads. People seemed to bring alot of fruit salads... Seems EVERYONE is hoping for spring soon here in the great white north.
