Have you tried to semi puree or mash up the veggies that are in your daughter's portion? This would be really easy to do without your having to make a totally separate meal. Also, when my kids were young, and didn't like veggies, I would mash them up and disguise them in things like meatloaf, meatballs, mashed potatoes, etc. Good luck!

I have found there is NEVER such a thing as a typical week!

Our family's menus for this week:
Mon: chicken breasts w/ basil pesto, egg noodles, cucumber salad, sourdough bread

Tues:Chicken noodle soup, crackers

Wed: Fish sticks, rice pilaf, green peas

Thurs: I'll figure something out when I get home....we have soccer tonight & I forgot to take anything out to thaw!

Fri: Spaghetti

I too have a daughter who has special needs. She is completely tube fed. I can understand how happy you must be when she enjoys her food.:)

The boneless porkchops in the crockpot were GREAT! My youngest daughter could chew them. They were so tender!

I do not have a tomato sauce recipe. Please do share! On your pasta salad, what type of pasta do you use? My youngest daughter is special needs and has trouble chewing fresh veggies, can I cook the veggies and then toss them in with the pasta and dressing?
We usually eat lasagna, spaghetti, or chicken parm. once a week. Thanks for your help!

Hi...I noticed you had no pasta dishes for that week....We always have pasta atleast once a week. Making a pasta salad with cut up veggies, a litlte cheese and italian dressing is a real quick and easy meal. I like to change up the dressings. Sometimes I'll use ranch, or balsamic, whatever I have on hand.

I also love to make my own tomato sauce. It just tastes so much better than the jar stuff. I usually will make a double batch and freeze half of it. That way I'll have it all ready for a night I don't have time to cook. Do you have any recipes on homemade tomato sauce? If not, I can share mine with you. I will just warn you, I don't messure when cooking. I just eye ball it.

What are you serving up this week?

I am tired of the same old thing everynight, so I am looking to you all for ideas, PLEASE!
Monday: Taco Salad (fritos, seasoned burger meat, cheese
black olives, onions, salsa,cheese)
Tuesday: Chicken Breasts baked in oven with 1 TBS Djon
mustard and some worchestershire sauce and a
baked potato
Wednesday: Pork Chops in crock pot(first time, I've done
put them in the C.Pot). I added frozen onions &
peppers, garlic, Dale's sauce, and worchester.
sauce. Fried squash and some type of bean
Thursday: Meat loaf, mashed potatoes, and green peas
Friday:soup night with friends (everyone brings a different
soup in crock pot
So what are you having this week or any night. This week has not been a usual week for our family as we have been traveling 2-3 hours away to dr 2 days this week. I usually serve lots more veggies, but it has been a strange week. I know I am not the healthiest cook, but I do cook for my family. And it is always better thana drive thru!
