I know this is a really old post but I'm new to the site and just wanted to offer a red velvet cake recipe that tastes as good as my "from scratch" recipe.
1 box Duncan Hines red velvet cake mix 1 box(3oz. size) jello instant vanilla pudding 4 large eggs 1 cup buttermilk 1/3 cup canola oil
Mix, using an electric mixer the oil, eggs,& buttermilk, just until blended. Then add the cake mix and the pudding. Mix on low until the dry ingredients are blended with the wet. Then mix on medium high for 2 minutes.Batter will be a little thick. Pour into 2 or 3- 8" round cake pans that have been sprayed with your favorite brand pan release(like Pam). Bake according to package directions. Frost with my recipe for a light cream cheese frosting.
1 -16 oz tub of cool whip-thawed 1- cup granulated sugar 2-8oz. packages softened cream cheese
Beat together the cream cheese and the sugar until well blended and the mixture is thin. Then add the cool whip and mix on low until well blended. This frosting will frost a 3 layer cake and give you enough to pipe some decorations if you like . Leftovers keep well. I have even frozen it before.
