I think baked cheesecake may be of a drier consistancy, as opposed to this lemon cheese pie. This cheese pie is very silky and not dry. And I love it, because there is no baking involved.:-D

:^O Silly me. When I saw the title of this thread, I thought it would have that lemon from the cute little yellow bottle and some velveeta in it.. :^O

Golden Lemon Cheese Pie

Here is a delicious dessert that I would like to share with everyone.
1 9-inch grahma cracker crumb crust
1 8 oz pkg cream cheese softened
1 14 oz can sweetened condensed milk
1/3 cup real lemon juice
1 teaspoon vanilla extract
beat cheese until fluffy, gradually beat in condensed milk until smooth. Stir in real lemon and vanilla extract. Pour into crust.
Golden lemon topping: in saucepan, combine 1/3 cup of sugar, 2 1/2 teaspoons cornstarct, add 1/2 cup water, 1/4 real lemon and 1 egg yolk. Mix well. Over med. heat, cook and stir until thickened. remove from heat, add in 1 tablespoon butter or margarine. Cool somewhat, then apply to top of lemon cheese pie...refrigerate for 3 hrs.
I have tried this and our friends went back for seconds, it really is delicious.;) Enjoy....any comments?
