My daughter is getting married May 31,08 so I am in the same boat and my X has not offered to help pay for anything. I have emailed all my friends and asked for things they have had at weddings and to please share any finger foods they have. The wedding is from 2-4 so the guest have had lunch before hand and will go home to dinner. We have 30 people coming so its not going to be a lot of people to fix for. What I have found is:
Publix cakes are best and we are getting a white sheet cake which is cheaper than a "wedding cake." We are going to also have chocolate cake with strawberries on top for the groom.
There are Dollar Tree stores all over or a dollar store of some sort that have nuts and candies. We also got out plastic there / 50 clear forks for 1.00. They also have small white napkins 50 count and white plates. Right now ours also have plastic platters that are real nice - silver ones too at some of the store. I have found for every dollar store they carry something different. Our Kroger store has managers specials first thing in the AM and you can get food trays marked down.
One thing I saw on the internet was that everyone in the family bring a dish of something with the recipe card that says ... Made with love from ... Since most of who is coming to this wedding is family this seems a fun idea and the bride has a few easy ideas to make. I am starting now buying things in boxes that won't spoil as I can afford it.

I do not have a lot of food suggestions, but I am a wedding coordinator for our church. May I suggest to keep costs down:

using a local grocery store floral department for all bouquets and boutonnières. No need for big floral arrangements-its pricey and flowers die.

borrow a great digital camera and ask someone you know that has that good picture nack or just use a professional photographer for those pose pictures or candid moments. The big book gets put on a shelf and dusty.

Got an ipod? create some playlists, hook up to some speakers and dance the night away. Get one of your comedic relatives/friends to make any announcements.

Some of the tuxedos places in Chicago offer free invitations with so many tux rentals.

My daughter is getting married in October and to keep costs down we're having a dessert reception. The ceremony will be at 2:00 and she wanted to do more than just the traditional wedding cake and groom's cake. So we'll have a cupcake "tree", cookies, grapes and cheese. Whatever I can find at Sam's that is easily put together and transported!

For our wedding we had the reception at a place where we provided our own alcohol. We went to BJ's (like a Costco) and bought all of the beer, wine and liquer. We only spent about $300 for 75 people, on alcohol and were able to return any unopened bottles. This probably saved us at least $1k.

Also, check websites of your local wedding planners. A lot of the times wedding planners have negotiated down the rates with their vendors. We used a wedding planning company and spent $9k on catering, cake, linens, flowers, dj, photography, bartender. Pretty much everything except the church and attire.

Check with Costco or other bulk food stores. Sometimes they do prepared items ahead of time for you to save on: veggie trays, chicken, sides, etc.

You know, Elizabeth's idea of cake and punch reception is a really good one. You could plan a 1:30 ceremony and a 3:00 punch/cake reception. Could have a small dance (if you wanted from 4:00-5:30 and your done!

My husband and I had a tight budget for our wedding too. To get around a big expensive dinner we had an evening/cocktail wedding. The ceremony was at 7pm and a variety of hot & cold finger foods, (ie cheese, fruit, veggies, finger sandwiches, puff pastry hor dourves etc) as well as punch and cake were served afterward.

My mom, the bridesmaids, and I did the food with some help from some aunts, grandmothers etc.

All included (hall, dress, invites, officiant, food, wedding party gifts, flowers, suits etc) came to just under 3500 dollars. We had about 100 guests. And I wouldn't trade a moment of it for a more elaborate affair.

did this for my daughter's wedding, southern style, bbq shredded pork, bbq chicken quarters, baked beans, green beans, potato salad, slaw, corn of cob,....very cheap, and all but salad & slaw made in crock pots, super easy

PASTA BAR! Bulk pasta, alfredo sauce, red sauce, one red sauce with meat, garlic bread, tossed salad, frozen fruit cups. About as easy and cheap as you can get.

How many people are you thinking??? And, what's a general idea of the foods you'd like??? Cold buffet?? Hot buffet?? Little pick-ups??? AND, how about getting family and friends to pitch in, kind of like a pot luck???

I wish you the best of luck for your wedding. Are you planning on salad? If so, give alot of toppings, they are a filler and most everyone likes salads. Also, chicken breasts are very reasonable. Shop at stores like Costco and SAM's club for bulk.

Swiss steak goes a long way and is cheaper -
Noodles, mashed potatoes, buy vegs in bulk and do a medley - yummy - but cheap :)~
