The easiest thing for you to "make" is a reservation at a nice restuarant. Or if there is a "Super Supper" store in your area that could be a possibility.

As a woman who has had my fair share of unpleasant in-law experiences, I assure you it doesn't matter what you do, they will whine and complain. In my case, they recognize my superior intellect and breeding which makes them jealous and resentful. But, because I am such an excellent cook (thanks to Kraft ) they insist on coming by for meals. Talent is often a double edged sword, isn't it?
Make them one of the zesty casseroles on this site. But be prepared for their frequent returns.

If he doesn't, he'd better learn fast. These are his parents, after all!

If they're like my in-laws, she might want to hide in the kitchen with her glass of wine
Does your dh grill? He could grill steaks or pork chops, or you could bake the chops & then serve with baked potatoes, steamed broccoli. maybe rye or sourdough bread & a salad.

Whenever I entertain, I tend to make lasagne. I can do it a day (or more if frozen) in advance and then heat the day of the dinner party. I just serve a beautiful salad and great fresh baked bread from a local bakery. I usually try to make (or buy) a dessert that can also be done ahead, so the day of the party all I have to do is clean up the house and set out flowers, etc... It makes the whole experience way less stressful. I generally also have hors d'oerves done ahead. Usually cruedite w/dip and a hot appetizer that has been frozen and can be popped in the oven. That way I can have a glass of wine with my guests and not be running around the kitchen like a crazy person.

How about pot roast? If you have a crock pot it makes it really easy. I put mine in the crock pot with peeled potatoes, peeled carrots, whole pearl onions and some beef broth and herbs. Let it all cook on low for a few hours and then serve with warm buttered rolls and steamed broccoli.
