Absolutely. Fresh vegetables and very good chesse. The only type of Parmesan chesse that I will buy is Kraft.....I reach for the green can, every time!

I often start with a layer of leftover cooked pasta on the bottom of the skillet. Then I add the veggies/meat/cheese and pour the egg mixture on top.
You cook frittatas on the stove and finish under the broiler.

They are so incredibly easy. All you need to do is crack some eggs, add veggies and cheese. Then bake.

How many friends?
I make my "guest" fritattas in a 12 inch cast iron skillet. I have a smaller cast iron skillet for intimate get togethers or sleepovers.
Traditional recipe for a fritatta for the 12- inch skillet, which feeds four to six, depending on appetite.
8 eggs, whisked salt & pepper 2 Italian sausage links, removed from casings 2 small red potatoes, diced 4 Tbs olive oil, divided 1 small onion, small diced 1 clove garlic, minced 1 bell pepper, any color, small diced 2 plum tomatoes, diced 1/2 cup Italian parsley, chopped 1/2 cup shredded mozzarella cheese 1/4 cup parmagian cheese
Heat skillet, then add 2 Tbs olive oil and the sausage. Fry the sausage until lightly browned and crumbly, then add the potatoes and continue to fry until the potatoes are brown and crispy on the outside but soft inside, adding extra olive oil as required.
Add the bell peppers and onion and continue to fry until the peppers are soft and the onions are translucent. Add the garlic and tomato and continue to fry until the garlic is lightly browned and the tomato is heated through. Add eggs seasoned with salt & pepper to taste, then stir in the parmagian cheese, and parsley . Cook over medium heat until bottom and sides are lightly browned.
Place fritatta under broiler until top is cooked, then spread mozzarella cheese on top and return to the broiler until cheese is brown and bubbly.
Cut into six wedges, like a pizza, and serve with Italian toast with butter and jam, and a fresh fruit salad.

Frittatas aren't hard and are as varied as types of pizza. Just make sure your skillet is oven proof. Here's another alternative. Take a loaf of hard crust italian or french bread. Remove the top and inside to form a "boat", being careful not to tear through. Cube the bread you removed into 1 inch pieces and set aside. Brush you loaf with olive oil and toast at 350 for 8-10 minutes. Beat 3 eggs and 1 cup milk with whatever omelet additions you would use (ham, peppers, mushrooms, cheese, etc.) Stir in the reserved bread cubes and carefully pour into the boat. Return to oven and bake 35-40 minutes or until your eggs are set. Slice and serve with fresh fruit, hashbrowns or whatever suits your taste.

Hi! I'm having some friends (all adults) over for brunch and am thinking about making a frittata for the first time - is this difficult to make? Does anyone have a recipe they can recommend? Or would you recommend a different egg dish?
Any help would be great. Thanks!
