Here is a great recipie. I just use frozen pie crust. But the rest of the recipie I follow exactly, with fresh pumpkin.. It really is fabulous. Just follow this link to video.

I also have tried to make a pumpkin pie with a fresh pumpkin and without good results. I would stick with canned pumpkin for a good pumkin pie.

hi, i'm cookie9120, i'm also new to this community as well. my suggestion is to try the recipe that vanessa suggested and if that doesn't work (which i'm sure it'll turn out GREAT. then used the standard recipe off of the can of pumpkin pie fillings.

omamcm, Thats why I'v never used fresh pumpkin. My Mom used to process her own, after I left home, and for the first couple of years I wouldn't eat her pumpkin pies,even though she made the best!!!, because the pumpkin (at least to me) was so grainy that it looked like it had been ate once,yuk!, finally she got it smooth enough that I would try it ( no, she didn't know that, ). It was really good, but I'am not sure that it was any better then Libby's. I to would like to know how to fix if so thats it's really smooth. annaskf

I have tried several times in my 1/2 century of cooking, to process "pie pumpkins" so that the smoothness and moisture content is comparable to commercially canned pumpkin. I have not been successful. Pie pumpkins are much smaller, darker orange and richer tasting than regular Halloween type pumpkins. It's a lot of work to put into a product, even if you have the equipment, such as a fairly large container for baking or steaming, a colander, a food mill and or ricer, strainers, both metal and paper or cloth, when, to my taste, a better product is readily available so inexpensively. Then there's the problem of disposing of the waste material. The fibers tender to mess up the garbage disposer the way celery strings do. If you put the stuff in the garbage it stinks, if your in the country, the seeds come up and you have pumpkins all over the place if you don't have a compost pile. If someone else has perfected a method for preparing pumpkin, I'm all ears, even though the bought pumpkin really is "real pumpkin".

I've tried several of these methods but like it best, if I have the time, when I bake the pumpkin halves. There is a lot of difference in the taste of the pumpkins and you want to make sure you buy a variety that's grown to be cooked. If I can find good pumpkins I'll cook several and freeze the cooked pumpkin in the right amount for pies later.
It's strange, but the recipe I like the best comes on the side of the pumpkin spice bottle. It's the easiest, too.

Colonial Pumpkin Pie
2 cups mashed cooked pumpkin 3/4 cup of sugar 2 t. ground cinnamon 3/4 t. ground nutmeg 1/4 t. ground cloves 3 slightly beaten eggs 1/2 cup whipping cream 1/2 cup milk 1 unbaked 9-inch pie crust
Combine pumpkin, sugar, spices, and salt. Blend in eggs, cream and milk. Stir until well blended. Pour into 9-inch pie crust. Bake at 400 degree for 40-45 minutes, or until knife inserted in center come out clean. Filling may crack.
