Here's my ideal of a "all vegie" meal. Green beans & potatoes cooked together, fried (with bacon grease) cabbage, sliced tomatoes, cucumbers, and green onions. then corn bread and a nice ice cold glass of milk, YUM!

I'm not big on veggies - more a meat & potatoes person. But I do eat them. I've thought about serving a meatless meal once a week. Don't have too many recipes, though. Just mac-n-cheese, vegetable soup or veggie pizza. Anyone got a good easy recipe for eggplant parmesan? Never made it, but I love it at restaurants.

O.K. color me 'dumb', just what is a "vegetarian" recipe, except a 'recipe without meat"??:|. Really? Couldn't you take just about any recipe with vegs and just leave out the meat?? And is seafood not considered meat? I did say 'dumb":-D, remember, hahaha.

:-DI am not a vegetarian either, but I'd like to try a vegan meal every now and then. Why isn't there a vegetarian collection of meals? (I'm sure it would be easier on the grocery budget, too!)

You've probably seen it but just in case look to the middle-left hand side of the screen and you can select by meal occasion and choose the seafood/meatless catagory. After sifting through the mac-and-cheese recipes there are some good meatless recipes.

I'm not a vegetarian, but I'd enjoy seeing more vegetarian recipes too! Every once in a while I will serve a vegetarian dinner.

there were not that many vegetarian recipes because there are not many vegetarians. If there were more vegetarians in the world, I bet there would be more vegetarian recipes. Thats just my two cents.
