If you go back and read the original thread you will see that Tink did mention dipping the vegetables in lemon juice to prevent them from turning brown.

Who said anything about dipping veg in lemon juice for treating the veg?
I suggested the lemon extract for flavour, just like the chesse!

Hi Tink,
Welcome to the message boards! I looked on line for instructions on how to create a vegetable bouquet and none of the "recipes" I found mentioned dipping the vegetables in lemon juice. (All had the vegetables soak in ice water before adding them to the arrangement.) You might consider blanching the vegetables. (Briefly --- 1 minute or so --- cook the vegetables then quickly transfer to a bowl of ice water to stop the cooking.) This will brighten the color of vegetables (broccoli, asparagus, carrots, etc) as well as kill the enzymes that cause vegetables to spoil. Here are a few sites I found.

Eggplant isn't poisonous. You can eat it raw but I'd think it would be bitter.

That could be really nice. You should be sure to use eggpalnt because they are so pretty. But be sure to put a warning sticker on the eggplant asking people not to eat them. I've heard they are deadly raw.

You could use broccoli for the leaves and use food coloring to soak cauliflower in to change the colors. And green onions for more green and maybe some edible glitter or something. And tomatoes on sticks.

I was thinking about your question and thought of this...
A cauliflower arrangement would be quite lovely.
To finish it off, spray on lemon extract, and sprinkle on some dried chive rings for color AND flavor.
If your recipient likes cheese, then a little kraft kd cheddar packet over the whole bouquet would fit the bill.
The colors and the flavors would be scintillating!

All you need is the right vase, and you're there! :-x

I would like to make a vegetable bouquet like they make the fruit bouquets. Can I dip the veggies in lemon juice to keep them from turning brown or what is the best thing to use?
