I've been such a space case lately! Yes Jen, I loosen the skin and put herbs between the skin and meat on the turkey, too as well as stuff some inside the bird along with an onion or two.

i make a mixture of poultry seasoning, salt, pepper, garlic, and mix it into butter and rub it between the skin and the flesh..

Sage is a common herb to use with turkey. I like rosemary, garlic and thyme along with sage to flavor mine. (Sorry, no parsley...)
