Congratulations on the baby!!! This is not a meal you freeze, but the day I went to the hospital for my son to be born, my mom roasted a whole turkey like she would for christmas or thansgiving, and I had enough cooked meat when I came back from the hospital to make sandwiches, tortilla rolls, soups, etc... it was perfect, she's done it now for all of my sisters and it is a LOT of help!!! Aww, congratulations on the coming baby. I love new baby smell.
Shepherds pie and lasagna both freeze well. I didn't have a real big appetite after mine were born, I was more interested in sleep. Yogurt was a life saver for me, easy and fast (because when I started to eat the baby would cry, of course!) Granola bars were another thing I could graze on the fly.
Hope all goes well, and enjoy the new little one. =)

Congrats on your new addition. I am waiting for our 2nd grandchild to arrive any day. So I feel your excitiment. I like to make italian sasuages and freeze them in small meal batches. Brown about 2 lbs of italian rope sausage cut in 2" pieces . Add to 64oz can of chunck tomatoes, 2 cut up green pepper and one chopped onion to crock pot along with the sausage and cook on low for about 5 hrs. Season with salt & pepper garlic powder to your own tastes. This will make a nice meal with fresh fruit and a tossed salad. Freeze extra sausage and sauce, place in plastic meal size containers. Easy but good. Also the crock pot makes great meat loaf. When you use your crock pot don't forget to place one of the plastic bag liners for easy clean up. Daj

As you make dinner during the week, make extra servings and freeze them. Most meats and veggies freeze very well. You can use divided plates with covers or small containers. Be sure to label each container.
You can cook ground beef and freeze it in small portions. It thaws quickly and makes it so easy to fix a quick meal of tacos, spaghetti, chili, sloppy joes, etc. Season meat with salt, pepper, and add garlic, onions, peppers, etc. Drain in colander and when cool, put in containers with a good sealing lid and freeze.
You can cook spaghetti pasta, add the meat and sauce and freeze it. Just reheat in microwave.
Shredded pork freezes great. I sprinkle a few drops of Liquid Smoke on a pork roast or boston butt, season it with salt, pepper and garlic powder and cook it on low for 8 hours in the crockpot with 1/2 cup water. Drain and discard liquid, shred meat and add BBQ sauce. When the meat cools, you can put it in containers and freeze. Or make sandwiches and wrap them in plastic wrap then foil and freeze them. You can do the same with a boneless chuck roast or chicken.
Ham freezes great. You can bake a ham, slice it, divide it and freeze it. Great for breakfast, sandwiches for lunch or for dinner.
I also cook several lbs of sausage and bacon and freeze them in freezer bags. So convenient already cooked!
Bake your favorite meatloaf recipe. When cool, wrap well and freeze. Mashed potatoes freeze well. Just thaw, reheat and stir until creamy. Whole sweet potatoes will cook in just minutes in the microwave. I wash and pat dry then rub a little oil all over and pop in microwave for 8 to 10 minutes, depending on size, until soft when squeezed.
Freezer Breakfast Burritos
8 eggs, beaten Salt and pepper, to taste 1 lb sausage, crumbled, cooked and drained OR 1 lb bacon, cooked and crumbled 1 cup shredded cheddar cheese 12 large flour tortillas
Add-ins: Finely diced green peppers Chopped green chilies Finely diced onion Chopped green onions Salsa
Scramble and season eggs. Remove from heat and stir in sausage or bacon and any add-ins you choose. Place 1/2 cup of egg mixture on a tortilla. Add some shredded cheese and roll up. Wrap each burrito in foil and freeze in single layer on a cookie sheet. When frozen, transfer to freezer bags. To serve, remove foil, wrap in a paper towel and heat in the microwave for about 2 minutes.
Freezer Chicken Nuggets
2 lbs boneless chicken breasts Sat and pepper, to taste 1/2 stick butter, melted 2 tsp Worcestershire sauce 1 cup Italian seasoned dry bread crumbs 1/2 cup fresh grated Parmesan cheese
Cut chicken into bite size pieces and season with pepper. Divide chicken into desired servings and place in freezer bags. Divide butter and Worcestershire sauce and add to each bag. Combine bread crumbs and cheese and place in separate freezer bags. Tape one bag of chicken and one bag of crumbs together and freeze. To bake, thaw chicken and discard marinade. Add chicken, a few pieces at a time, to crumb bag and shake to coat. Place in single layer on a sprayed cookie sheet and bake at 450 degrees for 8-10 minutes.
These recipes can be divided into smaller freezer-to-oven containers then frozen. Pizza Casserole
1 lb ground beef Salt, pepper, garlic, to taste 1 small onion, chopped 1 small jar spaghetti sauce 8 oz spiral pasta, cooked and drained 2 cups shredded mozarella cheese 3 oz sliced pepperoni
Season and cook beef and onion until done. Drain. Stir in spaghetti sauce and pasta. Pour into a 9x13 baking dish, sprinkle with cheese and top with pepperoni. Cover and freeze. Thaw in refrigerator overnight. Bake at 350 degrees for 35-40 minutes until heated through.
Sometimes I add a box of frozen chopped spinach, thawed and squeezed dry, and sometimes some finely diced onions. Very good. You can use softened cream cheese instead of ricotta or cottage cheese. Cheese Manicotti
8 oz small curd cottage cheese 8 oz ricotta cheese 8 oz mozzarella cheese, shredded 1/2 cup grated fresh parmesan cheese 1 egg, beaten 2 tbsp chopped fresh parsley Salt and pepper, to taste 1 box manicotti or jumbo shells 1 large jar spaghetti sauce
Combine cheeses, egg, parsley, salt and pepper. Cook manicotti or shells al dente, according to directions on box. Drain and fill with cheese mixture. Spread a thin layer of sauce in a 9x13 baking dish. Place manicotti or shells in single layer over sauce then cover with remaining sauce. To freeze, cover tightly with plastic wrap then foil. To bake, remove foil and plastic wrap. Cover with foil and bake at 350 degrees for 40 minutes. Remove foil and bake 15 more minutes.

My favorite is always some portioned out homemade meatballs in the freezer, followed closely by a pan of lasagna. The meatballs can go right from the freezer into a simmering pot of "off the shelf" spaghetti sauce. Boil some pasta and you're done. Put the lasagna in the fridge the night before, pop it in the oven and you're done... salad and bread for both. My favorites and so easy....
