It sounds to me as if you put a layer of white chocolate on the top of the cheesecake. If so that is what caused the problem. If you want to add chocolate on the top I would suggest you just drizzle it on or maybe put a swirl or crisscross pattern instead of covering the top. A heated knife will cut through a small amount of chocolate but will have trouble with a full layer covering the top.

Welcome to the message boards! I am hapy to hear that the White Chocolate Cheesecake turned out great but am sorry you had difficulty serving it. I have found that using unwaxed (unflavored) dental floss is the best way to cut cheesecake. Just cut an 18-inch piece of floss, then wrap the ends around your index fingers. Cut the cheesecake in half by pulling the floss through the cheesecake, starting at top surface of cheesecake and keeping the floss pulled tight. Release one end of the floss and pull through bottom of cheesecake. Rewrap the floss and use to cut cheesecake into desired number of slices. Give it a try!

You could use (new) fishing line to cut it. Cutting with a sawing motion will help when using the fishing line.

cutting White Chocolate Cheesecake

I made the White Chocolate Cheesecake, it tasted great. The only problem is that I couldn't cut it as nicely as that in the pictures, especially with the white chocolate hardened on the top. Even I used a warm knife, it hardly melt the white chocolate on the top and cut it smoothly.
