Why would it be "safer" only to freeze unopened packs? That's silly.
I freeze leftover cheese all the time.
Well because i thought after the seal was broken that would allow bacteria or something..sorry it was just a question i've never heard of freezing cheese so this is new to me.

I don't think it does. I don't drink much milk on its own though. I use it to bake, make yogurt, put in my tea/coffee, etc. I've only frozen 1% and 2%, not whole or skim, but I bet they'd be the same.
I also grate hard cheeses and freeze it in baggies. I keep a block of parmesan in the freezer and just grate off what I need. It's about a thousand times better than that stuff in the green can.

I don't agree with that chart. I freeze milk all the time and it's fine. I also freeze yogurt and use it for baking (and sometimes I just eat it frozen). It is correct about cheese though.

Hi, I think that Sarah Tonin is correct, or at least I have done both and the cheese was fine. Some cheese will be crumbley and not shred well, but still works to eat or cook with it. I sure beats buying it and having it mold . I have had this happen several times and the cheese was not "out dated" or in a few cases, hadn't been opened

How do you know? I'm not trying to be rude or anything i'm just wondering because it does seem safer to freeze unopened cheese so i was just wondering..

You should not freeze soft cheeses but you can freeze hard cheeses.
The texture will be different when thawed so you should only use them for cooking or baking and not on a cheese tray or sandwich, etc.
And, sorry, but Michele isn't entirely right. You can freeze cheese after you open it and you can freeze it for a lot longer than 2 months. More like 6, probably more.

Hi dwightbailey, Welcome to the message boards! I have just a few things to add to what Laura posted. Although it's best when served fresh, cheese may be frozen. Shredded or block cheese may be frozen for up to 2 months before opening. Once opened, cheese should not be frozen. Thaw frozen cheese overnight in refrigerator.

I have had luck freezing unopened blocks of cheese, altho I have heard that if your cheese is not vaccuum packed it wil become watery when thawed. I buy several blocks when on sale and use many ways--sliced, cubed, shredded, etc! Its a great way to save money.
