Try Beth's All Purpose Flour from the Gluten-Free Pantry. My sister has Celiac Disease and my mom buys the Beth's flour from Amazon by the case. She uses it to make GF chocolate chip cookies (using the Tollhouse recipe with the GF flour) and now we can't even tell the difference anymore.
Gluten-Free Pantry also offers a lot of other mixes on Amazon, like sandwich bread, chocolate truffle brownies, country french bread, etc.

Fortunately, gluten free flours, crackers, breads, cereals and pastas are more available now. Even our local Wal-Mart Supercenter is starting to carry more products.
I have a good friend who was diagnosed with celiac disease and she said, while the diet was originally daunting, it has become easier and much healthier for her.

I have been diagnosed with celiac disease and it is very frustrating trying to cook two meals a night for my family or I just don't eat dinner that night. Could your next issue be about gluten free recipes and products. It would be greatly appreciated and most helpful. Thank you for considering this. Because more and more people are ccoming down with the disease and it can kill you if you don't take care of yourself right. So a lillte help would be much appreciated so the whole family can eat one meal instead of two.

Bob's Red Mill has come out with a "gluten free all purpose flour". I HIGHLY recommend it. You cannot hardly tell the difference.

My daughter has been diagnosed for 2 years now and it was very annoying at first to mess with all the flours that you have to use (tapioca, potato, corn, rice, etc.) within about the last 6 months I discovered that Bob's Red Mill now has a "gluten free all purpose flour". I bought it and it works great! I substitute it all the time on dishes and baked goods and no one can tell the difference. I have 2 other kids who are always asking "is that gluten free?" With this flour they cannot tell the difference (so I tell them after they say how wonderful it was!)

My daughter has an "Uncle-in-law" that has Celiac Disease. I found this site [which is part of the WebMD network} to help her convert some of her recipes for when he visits. There is a lot of helpful information there to help understand Celiac Disease as well. Will your doctor recommend a nutritionist to help you convert your favorite recipes?

I have a friend that has Celiac's... This is one of the recipes I have made for her...
Chili 1 lb ground turkey - cooked and drained 3 celery stalks - diced 1 big onion - diced 2 yellow squash - diced * I use 1 yellow and 1 zucchini 2 cans diced tomatoes 2 cans tomato sauce 1 can Bush's red kidney beans 1 can Bush's pinto beans * I have also used white beans seasoning: salt, pepper, little groung chili pepper to taste... (the original recipe called for a chili packet - but you can't use that... so just season however you like!)
I just throw it all into a crock and just let it go all day! You can substitute almost anything. I have used gluten free chicken broth, various beans, ground beef (but I like the turkey better), etc.
I have a few other recipes I have made for her... I will try to post more later.

A family member now has Celiac disease and we are looking for recipes that are gluten free, especially our favorite Kraft recipes. It has been difficult substituting the gluten free ingredients in recipes...there is such a taste and consistency difference. What would be the best substitute for flour that would not change the taste or texture?
